Steamed Salmon with Curried Lentils, Kale & Pickled Red Onions

Well I honestly never thought I’d watch the Grand National on a cinema screen!  There’s a first time for everything I guess.

How was your weekend?
We took a little trip to the Cotswolds,  the stunning view from the garden of the house we stayed in is above…

The adults were outnumbered by the children this weekend & on this occasion the children were made up of 4 sets of twins.

Yes, you read that correctly.

There were mine,
one other set belonging to one family
and
two sets belonging to the other…
yes you read that right too.
One couple had TWO sets of twins.

Not only that but they are just 2 years apart in age.  Can you imagine what life was like for that Mummy when one set were aged 2 years and others were newborn..errrr, I can’t even bring myself to think about it!

Anyway… being Grand National weekend we decided to have a little ‘group’ flutter, as you do.  Chucked the horses names in a hat, £1 per horse and picked out 3 each.

I can’t even remember the names of mine, but boy did we have a laugh watching the race.

The house had an awesome cinema in it so we watched it on the big screen…and all had a BIG SCREAM, as the race unfolded.  I’ve never heard so much cheering as the horses were galloping down the final furlong.  I didn’t win, nowhere near…

Ah well, you win some you lose some eh?

So what has the coming week got in store?

Well up in Stow on the Wold, I was a stones throw from the gorgeous spa and cookery school of Daylesford Organic Farm,
somewhere I went back in February with some lovely friends to try out a Healthy Cooking & Spa day adventure.

It was a superb day and we cooked some delicious, healthy meals as well as relaxing and enjoying a massage!

So this week I’m going to try and re-make one of the recipes I learned that day:

Steamed Salmon with curried lentils, kale and pickled red onions…

I’ll let you know how I get on this week without the professional chef to oversee my work.

I’m off to see the physio again tomorrow, fingers crossed I’ll get some more good news and be able to run for more than 20 seconds this week 😂

Not sure I’ll be given the all clear to do this Run Fit workout, I wrote for one of my classes this evening, so I’ll leave it to you lot to give it a go…
