This is a super fast, delicious, healthy lunchtime meal.

To save time I use the Tilda Basmati Rice that you can microwave in minutes.  If you don’t want to microwave, rice can be boiled or steamed within 15 minutes.


Measure out a fistful of Basmati rice,

Dessert spoonful of tuna canned in water or brine (drained)

Cubes of half a cucumber,

One tomato cubed,

A handful of rocket,

3-4 Asparagus spears (steamed),

A handful of Kale (steamed),

A spoonful sweetcorn

Make it…

Mix everything together

Dress with Olive Oil and White Wine Vinegar or a small teaspoon of Mayonnaise
