These pancakes are a winner with the children. So light and fluffy and deliciously tasty they don’t even need a topping! Although a little fruit and a drizzle of honey is rather nice 🙂
1/2 cup ubcooked oats
1/2 cup plain yoghurt
1/3 to 3/4 cup of semi skimmed milk
1 egg or 2 egg whites beaten
1 tbsp rapeseed oil
2 tbsp packed brown sugar
1 tsp baking powder
1/2 cup white self raising flour 1/2 cup wholemeal self raising flour
pinch of cinnamon
Mix oats, yoghurt and milk and leave to stand for 15 minutes
After 15 mins beat in the egg, oil and mix well.Add sugar, cinnamon baking powder and flour.
Stir until moist.
Heat a lightly oiled pan on low to medium heat
Pour small amount of batter per pancake into pan, turn when tops bubble – turn once only.
