Quick, easy, nutritious lunch that is super tasty 🙂

Ingredients

Butter for pan
40g Fresh Spinach
2 Eggs
2 tbsp Cottage Cheese
1 Spring Onion Sliced

Make it…

Put Spinach into a colander over the sink and pour over boiling water.
Leave to drain and cool, then squeeze as much liquid out as you can and chop.
Beat the eggs, add spinach and cottage cheese and spring onions.
Melt the butter in the pan and add the egg mixture and scramble.

Serve with a salad of rocket, tomatoes and cucumber.
