This simple, quick and super healthy recipe is the perfect balanced evening meal for busy parents.


1 Grilled Salmon Steak

Handful of Spinach,

Handful of Rocket

Handful of Green Beans,

5 x Asparagus Spears

1 x Roasted red onion

1/4 pack Puy Lentils

Drizzle of Olive Oil and Balsamic Vinegar to dress

Make It….

Grill the salmon under a moderate grill for 8-10 minutes.

Steam the Asparagus and green beans for 5 minutes or until tender

Gently heat the Puy Lentils in the microwave

Wash and dry the spinach and rocket

Place everything except the salmon in a dish a dress with the olive oil and balsamic vinegar

Lay salmon on top to serve
