CHOCOLATE STUFFED RASPBERRIES
Serves 2-4Takes 20 mins
1 punnet Raspberries
1/4 cup dark chocolate
Melt Chocolate in microwave then stir
Meanwhile freeze raspberries for a few minutes in freezer
Use a teaspoon to gently fill center of each raspberry with the chocolate
Place in fridge or freezer to set.
CHOCOLATE BANANA BITES
1 bar chocolate
2 organic bananas, ripe but firm
Slice the bananas into 1/4 in thick slices.
Place the slices on a piece of greaseproof paper, and freeze them until they are firm (about 1/2 hour)
Melt the chocolate
Using a toothpick, dip the bananas into the chocolate and place them back onto the paper.
Return to freezer, and freeze until the chocolate is set
Transfer to a container with lid, and freeze for eating as and when!
PEANUT BUTTER & JAM HEALTHY OATMEAL COOKIES
2 medium ripe bananas, mashed
1 cup of uncooked oats
2 tbsp crunchy peanut butter
4 teaspoons reduced sugar jam
Preheat oven to 175°C
Line a baking tray with greaseproof paper
Combine the mashed bananas and peanut butter in a medium bowl
Add the oats and mix
Place batter by tablespoons (little more than level) on the baking tray making an indent with the back of a teaspoon
Repeat until you have 16 cookies.
Bake 15 minutes or until golden
Remove from oven and top each with 1/4 teaspoon jam
