This is a quick, easy to prepare and make, mid week meal for the whole family.  Full of good nutrients from the vegetables and pesto too and only 550 kcals 🙂

Broccoli – half a head chopped
Cauliflower – half a head chopped
Carrots  x 2 peeled and chopped
24 Chorizo slices sliced
Macaroni 75 g per adult, less for children
Scala Char Grilled Aubergine pesto – 1 jar

Make it…

Serves 2 Adults and 2 toddlers with left overs for lunch tomorrow
Stir Fry the ChorizoAdd the vegetables and stir fry until slightly soft
meanwhile boil the Macaroni
Once Macaroni is cooked add to the veg and chorizo
Stir Through
Stir Through the Pesto
Serve with a sprinkling of Parmesan Cheese
