This is simply one of the nicest Jamie Oliver recipes I’ve tried to date! Hubby and I had a date night on Saturday and this was on the menu. It’s a real winner.

1 tsp cumin seeds
2x 150g monkfish fillets
2 sprigs of fresh thyme
olive oil
200g spinach
50g feta cheese
1/2 lemon
Make It….
Crush & sprinkle cumin seeds over monkfish fillets
Add thyme leaves on top and season
Heat a little oil in pan over medium heat
Add fish, fry for 3 -4 mins on each side or until coloured and cooked
Bring large pan of salted water to boil
Blanch spinach for 3 mins
Drain and drizzle with oil
Serve monkfish, sprinkled with feta and a good squeeze of lemon juice.
