Super Quick and easy to make…super yummy too

Ingredients

150g low fat spread
100g light muscovado sugar
1 tsp vanilla extract
2 eggs
200g self raising flour
90g plain flour
150g low fat greek yoghurt
250g fresh or frozen strawberries
1 tbsp demerara sugar
Icing sugar to dust

Make It….

Heat oven to 160 fan
Lightly grease tin then line with baking paper
Put spread, muscovado sugar, vanilla, eggs, both flours & yoghurt in a mixing bowl and beat with electric mixer for 2 mins or until smooth
Spoon into tin
Smooth surface with spatula
Decorate with strawberries and sprinkle with demerara sugar
Transfer to oven and cook for 1 hour (until skewer in middle comes out
clean)
Leave to cool in tin 10 mins
Turn out and stand, dust with icing sugar
Cut into slices and serve
