This is a super fast, delicious, healthy lunchtime meal.<\/p>\n
To save time I use the Tilda Basmati Rice that you can microwave in minutes.\u00a0 If you don’t want to microwave, rice can be boiled or steamed within 15 minutes.<\/p>\n
Measure out a fistful of Basmati rice,<\/p>\n
Dessert spoonful of tuna canned in water or brine (drained)<\/p>\n
Cubes of half a cucumber,<\/p>\n
One tomato cubed,<\/p>\n
A handful of rocket,<\/p>\n
3-4 Asparagus spears (steamed),<\/p>\n
A handful of Kale (steamed),<\/p>\n
A spoonful sweetcorn<\/p>\n
Mix everything together<\/p>\n
Dress with Olive Oil and White Wine Vinegar or a small teaspoon of Mayonnaise<\/p>\n
