recipe for healthy diet poached eggs with salmon

This healthy recipe for poached eggs and smoked salmon is even more delicious than it looks.

Ingredients

300g whole new potatoes
1 tbsp rapeseed oil
140g White Cabbage finely chopped
2 spring onions finely sliced
1 tbsp snipped chives
2 medium eggs
75g smoked salmon

Make It….

Cook the potatoes in water until tender (15 mins)
Heat oil in non stick pan
Add cabbage
Add spring onions
Cook for 2 minutes
Chop and squash the potatoes
Add to pan with chives too
Cook for 4-5 mins on each side
Poach the eggs in boiling water for 3 minutes, remove and drain
Serve the Bubble and squeak topped with salmon and poached eggs.
